Kretschmar Herbed Chicken Finger Sandwiches

Ingredients

  • 2 c finely chopped Kretschmar herbed garlic chicken breast
  • 1/4 c plus 1 tbsp mayonnaise
  • 1/4 c plus 1 tbsp sour cream
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped green onion
  • 1 tbsp chopped fresh tarragon
  • 1 tbsp chopped fresh dill
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 10 sl white sandwich bread
  • 1/2 c thinly sliced cucumber

Instructions

  • MIX mayonnaise, sour cream, parsley, green onion, tarragon, dill, lemon juice, salt, and pepper.
  • ADD chicken and stir together.
  • SPREAD a thick, even layer of the chicken onto 5 bread slices.
  • COVER chicken with cucumber slices. Top each with remaining bread slice.
  • CUT crust from bread; discard. Cut each sandwich into 3 rectangular shapes.
  • GARNISH with extra sliced cucumber or fresh cut herbs.
