24 oz. Kretschmar Master’s Cut Blackened Roast Beef
1 medium Red Onion, halved and thinly sliced
1 Tbsp. plus 2 tsp. Kosher Salt
6 Tbsp. Red Wine Vinegar
3/4 cup Mayonnaise
3/4 cup Sour Cream
1/4 cup plus 2 Tbsp. jarred Horseradish
1/2 tsp. grated Lemon Zest
Freshly ground Black Pepper
12 Pretzel Slider Buns
12 slices Tomatoes
3 cups Arugula
1. Mix together the onion and 1 tablespoon salt in a small bowl. Set aside for 20 minutes. Rinse the onions with cold running water. Drain and squeeze to remove excess liquid. Combine the onions and the vinegar and marinate at least 30 minutes or up to 24 hours.
2. Mix together the mayonnaise, sour cream, horseradish, lemon zest and 2 teaspoons salt in a small bowl. Season with pepper and hot sauce to taste. Refrigerate the horseradish sauce for at least 30 minutes.
3. Preheat oven to broil. Slice the buns in half lengthwise. Scoop out each bun half and transfer to a baking sheet cut-side up. Put the buns under the broiler until toasted. Spread the horseradish sauce inside the buns. Top with 1 tomato slice, Kretschmar Blackened Roast Beef, a few onions and arugula.
