4 oz. Kretschmar Masters Cut Santa Fe Turkey Breast - diced
1 ½ oz. diced tomatoes
¾ oz. corn kernels, roasted
1 tsp. basil, chiffonade cut
½ tsp. cilantro, chopped
½ tsp. jalapeno, chopped fine
4 pieces radicchio lettuce
2 oz. olive oil
1 6 baguette
Instructions
Slice baguette into 4 equal croutons, 1 1/2 thick. Brush with olive oil and grill until toasted. Combine turkey, tomatoes, corn, basil, cilantro and jalapeño in a bowl. Season with salt and pepper. Place radicchio on top of each crouton. Place even amounts of turkey mixture on each of the radicchio leaves.
