Smoked Ham Off the Bone Breakfast Casserole

  • 1 1/2 lbs. Kretschmar Ham Off the Bone (sliced thick and diced bite size)
  • 2 c. Kretschmar® Mild Cheddar Cheese (Shredded)
  • 2 1/2 c. Seasoned Croutons
  • 1/4 c. Green Peppers (Chopped & Sautéed)
  • 1/4 c. White Onion (Chopped & Sautéed)
  • 4 Eggs
  • 2 1/2 c. Milk
  • 1 8 oz. can Cream of Mushroom Soup (undiluted)
  • 1 4 oz. Can sliced Mushrooms (drained)
  • 3/4 tsp. Dry Mustard
  • 1 tsp. Hot Sauce
  • Optional: Cherry Tomatoes and Parsley Sprigs to garnish


  • Lightly grease a 13x9x2 baking pan, spread croutons in pan; set aside. Sauté Kretschmar® Ham Off the Bone and cook until lightly browned. Add green peppers and onions cook until soft, drain off excess oil. Sprinkle diced Ham and vegetable mixture over the croutons.
  • Combine Eggs and the rest of ingredients, mix well and pour over diced ham. Cover and refrigerate at least 8 hours or overnight. Preheat oven at 325ºF. Bake uncovered for 50-55 min. Sprinkle with Kretschmar® Cheddar Cheese and bake for 5 more minutes. Garnish if desired. Serve warm.
